cheese + onion soda-beer bread

I haven't posted a recipe in a while, but boy was this bread yummy! As is usual with me, I didn't follow a recipe but sort of pieced three together. I was smart enough this time to jot down on a sticky note what I did in case it came out...it just seemed like it might. And boy did it ever! Caleb wolfed down his hunk and then asked me, quite seriously and with a really hopeful face, could his next piece be 'this big?' (half of the whole loaf). Silly boy!

3 c. white whole wheat flour
6 T butter
Cut butter into the flour and continue to mix until butter is in pea-sized pieces or smaller.
Add:

3/4 c. beer
1/2 c. milk
3 T whey (apple cider vinegar would work too)

Mix to combine. Place in a glass bowl, cover with plastic wrap and let sit overnight.

When ready to make the bread, preheat oven to 400. Grease a baking sheet. Finely chop 1 small onion. Cut enough cheese into small 1/2" cubes so that you have a generous cup of cheese cubes. Set the onion and cheese aside.

Knead the dough lightly (add a dusting of flour if necessary). Sprinkle 1/2 t. salt and 2 T sucanat (or sugar) over the dough and knead gently until well mixed. Sprinkle 1/2 T baking powder over the dough and knead gently to mix. Repeat with one more 1/2 T baking powder. Add half the cheese and onions and knead lightly to mix, and repeat with the rest of the cheese and onions. Shape dough into a round and place on baking sheet. Cut a cross in the top.

Bake for about 35 minutes, or until nice and golden brown. Let sit for 10-15 minutes to cool before cutting, but do serve it warm.

Will yield 10-12 generous wedges of yummy, flavorful bread.
